Wood Fired Oven Recipes
I often get asked for this recipe so here goes, I use it all the time. If you don’t have a wood fired oven you can do this in your normal oven. It’s best to use a pizza stone or terracotta tile to bake on.
2 & 1/4 tsp active Dry Yeast
225 mls warm water
2 tbsp unsalted butter – melted
2 tbsp olive oil
1 tsp salt
225 g plain flour ( use organic if you can)
125 g Strong bread or Bakers flour ( if you can’t get this then just use plain flour)
Sprinkle yeast over warm water in bowl. Whisk and let sit aside for about 10 mins until yeast is dissolved.
Mix olive oil into melted butter & add salt. Add to flour. Now add your water holding back a small amount. You will need to Knead either with dough hook attachment or by hand for about 5 to 10 mins until dough is smooth & elastic.
Place dough in slightly oiled bowl, place in warm place for at least one hour or until it has doubled in size.
Knock back the dough and knead for about 2 minutes, return to oiled bowl and let it rise for another 45 mins.
If you’re cooking in a normal oven you must let your oven get very hot before you start. I would recommend 220 deg for a good 20 mins so that your stone or tile is hot before you start. Then bring it back to 190 deg to cook in.
I use this recipe when I cook Turkish Bread, you can stuff the bread with your favourite meats/cheeses etc… it’s very versatile.
